From Garden to Table our Freezer Italian Tomato Basil Sauce is a real keeper! This recipe allows you to serve a great sauce with your pasta's and have enough left to freeze for the next time you want to have a very special sauce to use.

How To Make Italian Tomato Basil Sauce

We will begin our recipe with about 10 pounds of a variety of tomatoes from
our garden harvest.
We drop the tomatoes into boiling water for about 3 minutes, then immediately into an ice bath.
The skin of the tomato will slip right off.
Chop the tomatoes and 
place them into the stew pot.
Sauté the onions, garlic, red bell peppers and green bell peppers.
Place the chopped tomatoes and the sautéed vegetables into the stew pot.
Season with the chopped fresh basil, oregano, salt, and pepper. Cook on medium until it comes to a boil, then reduce the heat to low. Cover the stew pot and continue on low for about 20 minutes, stirring occasionally. 
Carefully transfer 3 to 4 cups at a time to the food processor and pulse about 4 to 5 times. Place the sauce into a cooling container.
At this point you can heat to serve with any pasta or place in freezer containers to freeze.
