It is that time of the year when we begin to think of the county and local fair's and festivals. I love going to all of these events and one of the main reasons I enjoy them so much is for the fun fair food. This year many of those events have been cancelled and we won't be able to enjoy those special fair treats like our Funnel Cakes. Instead we are enjoying our special treats right here at home. We had so much fun making these Funnel Cakes and even more fun eating them, they really are as good as the ones we get at the fair.

Start With A Wonderful Batter

Next We Pour Some Of The Batter 

Into A Ziplock Bag, Snip The Bottom

Of The Bag For A Piping Bag.

Heat The Oil In The Dutch Oven

Drizzle The Batter Directly Into The Hot Oil
The Funnel Cake Will Cook Really Fast
As Soon As It Begins To Turn Golden Brown
Remove It From The Hot Oil

Drain and Cool On A Cooling Rack

Let Cool Completely!
As The Funnel Cake Cools It Will Become Crisp

Miz Helen's Kitchen
Ingredients
2 quarts neutral frying oil
1 (15.25-ounce) box white cake mix
(I like a French Vanilla cake mix)
1/2 cup all-purpose flour
1 teaspoon baking powder
1-1/3 cup milk
3 large eggs, beaten
1 cup confectioners sugar, sifted
Directions
Pour the oil into a heavy Dutch oven and begin to heat it with medium heat to 375 degrees. Use a thermometer to keep an eye on the heat.
In a mixing pitcher or bowl, add the cake mix, flour and baking powder and whisk together.
Add the milk and eggs to the dry ingredients. Using a hand mixer mix until the batter is very smooth. 
Place the bag inside a glass or cup and pour some of the batter into the bag and squeeze it all down to the tip.
Snip the tip of the bag and you are ready to go.
When the oil has reached the desired temperature, squeeze the batter in a circular motion into the hot oil.
Fry about 30 to 45 seconds on each side very gently turning. Fry until golden brown on both sides.
Very gently remove the Funnel Cakes from the oil and place them on the cooling rack. They become crispy as they cool.
Dust the cooled cakes with confectioners sugar.
Recipe Tip:
The more height that you can have over the oil to squeeze the batter into the oil the better. I am very short so I can't get up high enough to make a small pattern. No matter the pattern these Funnel Cakes are delicious!
