Rice Custard

Rice Custard is one of those comfort foods for me, it is soft and creamy with real gentle flavors. I had left over rice from a recipe the other day so I decided to use it to make this very old recipe. I remember my Mother making this recipe and she would sit it on the counter to cool before putting it in the refrigerator and I would just want a bowl of that custard so bad. Today when I make this dessert, guess what, I have a nice warm bowl of custard, it is so delicious, hope you enjoy it to.

Rice Custard

Ingredients
1 cup cooked rice
2 1/2 cups milk
3 eggs lightly beaten
1 cup sugar
1/2 cup raisins
1 teaspoon vanilla
1-1/2 teaspoon cinnamon
1/4 teaspoon all spice
pinch nutmeg
pinch salt
1 tablespoon butter
Directions
Mix all the ingredients in a large mixing bowl until mixed well
Butter a 9 inch baking dish
Pour the rice mixture into the buttered baking dish
Bake 325 for 1-1/2 hour until golden brown on top and the center is set
Enjoy warm or chilled
Garnish with whipped cream and mint

  5. Miz, Helen, I do love this rice custard. My grandmother would make rice custard (pudding) and tapioca pudding, too...and I would wait for that warm custard! Sometimes she would make a little bowl just for me! Thank you for sharing this with us at Treasure Box Tuesday- pinned! :)
