Cajun Cabbage

We can't seem to get enough cabbage this time of the year. We have had some wonderful cabbage from our garden, so we have opportunities to use the cabbage in many different dishes . Cabbage dishes come from just about every cuisine, Polish, German, Irish and American. In seeking to develop a new cabbage recipe, it just became Cajun Cabbage along the way. My husband and friends just loved it and said they will be asking for this one again real soon, I am exited to share it with you today.

Be Sure and Read This Recipe
All The Way Through Before Starting
Ingredients For The Cabbage
2 pound's Kielbasa Sausage Sliced
2 medium size onion's medium chopped
7 to 8 cups cabbage chopped
1 tablespoon olive oil
2 cups chicken broth
Directions
Prepare the Cajun Sauce (recipe below) and set aside
In a hot Dutch oven brown the sausage in the oil and remove it from the pot.
Brown the vegetables in the sausage oil then add the sausage back into the pot.
Add the Cajun Sauce (recipe below) and chicken broth mix well
Bring the cabbage to a boil and then cover, reduce the heat to low and cook on low for 45 minutes
Serve on a bed of hot rice
Cajun Sauce
Ingredients For The Sauce
1 tablespoon butter
1 cup tomatoes, peeled and diced
1 cup onions, chopped
1 cup celery, chopped
1 cup green bell pepper, chopped
1 1/2 teaspoons garlic, minced
1 cup tomato sauce
1 1/2 cups chicken broth
dash Tabasco sauce to taste
1 teaspoon dried oregano leaves
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried basil leaves
2 bay leaves
1/2 teaspoon paprika
1 teaspoon salt
1 teaspoon black pepper
1/8 teaspoon cayenne pepper to taste
Directions
In a medium skillet over medium heat melt the butter
Stir in the tomatoes, onions, celery and bell peppers and garlic
Mix all the season together and add them to the skillet mix
Saute the mix until the onions are clear
Stir in the chicken broth, tomato sauce, and Tabasco
Bring the mix to a boil and then reduce to simmer
Simmer for 15 to 20 minutes
Remove the bay leaves

    I'm leaving you another comment with a question, hope you don't mind. I'm looking to make this recipe this weekend. I see you use butter in the sauce (in directions you mention to melt the butter) but do not see it as a listed ingredient or how much. Can you please tell me how much better this recipes requires? Can't wait to make this! Thank you again..

      I would use about 1 tablespoon butter for that part of the recipe. I really need to go back and correct that, thanks for bringing it to my attention. This is why all my friends and family wanted me to start writing all my recipes down, which lead to the cookbook and then the blog. I always just cook from my head.
