Fresh Strawberry Scones at Miz Helen's Country Cottage
I am treating my husband to Fresh Strawberry Scones today. There is a really great little coffee shop in the village that often times has fresh scones and we love stopping in sometime for a special treat. This scone recipe is so easy to make and with the fresh strawberries it is just delicious. We love this recipe so much we have even served it as dessert, it really does melt in your mouth.

The Strawberries that we are using today are fresh from our farmers produce stand at the end of our road. I brought them to the kitchen and will dice them in a small dice for the scones.

I have whisk together the flour, sugar, baking powder and salt in a large mixing bowl. Then I diced the butter into small cubes and placed the butter into the center of the flour mixture.

I use a pastry blender to cut the butter into the flour mixture until it resembles coarse crumbs.

Next I whisk together the eggs and then add the half and half and whisk well.

I like to make a well in the center of the flour mixture and pour the eggs and milk mixture into the well.

Next pour the diced strawberries on top of the eggs and milk mixture. Very gently begin to stir the flour mixture, liquid and strawberries together. The dough will begin to come together but will be very sticky.

Line a baking sheet with parchment paper and sprinkle a little flour on the parchment paper. Gather your dough from the bowl and place it in the center of the parchment paper. I like to work with a nine inch circle, you can measure and draw it if you like, I just pretty much do it. This circle measures exactly nine inches. Just pat the dough and keep pushing it together, firming the sides. Scones are supposed to be a rustic pastry so don't worry if it isn't perfect. I will make mine about 3/4 to 1 inch high. I cut the scones into 8 slices at this point with a very sharp knife. I don't really separate them I just make sure they have a sharp cut. Cutting them at this point makes serving so much easier.

Generously sprinkle with sparkling sugar 
and bake until golden!

  10. The recipe looked delish, but I needed a whole lot more flour than 1/2 cup. I think I needed 1 and 1/2 cups. Did anyone else have any issues?

    1. No, I haven't had any reports about short flour. The recipe calls for 1 & 1/2 cups of flour. I really don't know what may have happened that the recipe mis-read for you. I do appreciate you letting me know so that I could check on it. It is a great recipe that we just love. I am so sorry that happened, maybe you can try them again sometime. Hope you have a good evening.
