These fresh strawberry cookies are just delicious, made from a very simple recipe with a great bite of fresh strawberries. We have had a great harvest of strawberries this year and what a special recipe to use for those berries. I usually make a double batch of these cookies because one batch just does not last that long. These cookies freeze really well for about 3 months and taste just like they just came out of the oven.
How To Make Strawberry Cookies
Start With Fresh Strawberries

We will chop the berries in a very small chop
 and  place them on a plate
sprinkle the sugar over the berries and set aside.

The batter for the cookies is very simple with a very few ingredients.

Just mix it completely and add the chopped strawberries.

With a scoop place the cookie balls on a cookie sheet.

Bake and let cool on a cooling rack.

After the cookies have cooled, glaze with vanilla glaze.

Fresh Strawberry Cookies With Vanilla Glaze

3 Dozen Cookies

Ingredients

2 cups fresh strawberries, chopped small

3 tablespoons sugar

1 (15.25 ounce) strawberry cake mix

1 egg, room temperature

1/3 cup vegetable oil

2 tablespoons water

Glaze

1/2 cup powdered sugar

1 teaspoon vanilla extract

2 tablespoons water

Directions

Wash and chop the strawberries, spread them on a plate. Sprinkle the strawberries with the sugar and set aside.

Pour the cake mix into a medium size mixing bowl.

Make a well in the center of the cake mix then pour in the egg, oil and water.

Mix the batter well until completely blended.

Add the chopped strawberries and mix well.

With a tablespoon scoop: scoop cookie batter balls onto a un-greased cookie sheet.

Bake at 375 degrees for 15 to 18 minutes, until just turning golden brown.

Remove the cookies to a cooling rack and let cool completely before glazing.

Place a piece of wax paper under the cooling rack.

In a small mixing bowl, mix the powdered sugar, vanilla extract and water. Mix until the right consistency for the glaze. If the glaze is to thin add more sugar, to thick add more water.

Drizzle the glaze over the cooled cookies. Let the glaze dry before serving.
