Salsa Chicken Tacos
We are Tex-Mex lovers here at the cottage and we love our tacos. The filling for these taco's is just delicious and takes no time to have them on the table. A great time saving recipe for any occasion to feed a few or a large group. Our Salsa Chicken Taco recipe is so versatile that we have used the filling with other tortillas and lettuce wrap. The filling recipe freezes well for up to 3 months, a great recipe to have on hand for that busy day.
To complete these delicious tacos, add chopped green onions, fresh cilantro, and a mix of shredded sharp cheddar and pepper jack cheese.

Making Salsa Chicken Tacos
We begin this recipe with
a sauté of onion and garlic in a
hot oiled iron skillet.
Add the ground chicken, stir and
cook until the chicken is cooked.
simmer for 5 minutes.
Season the filling and add the salsa, stirring together until completely mixed .
Simmer for 5 to 7 minutes.
To complete these delicious tacos, add chopped green onions, fresh cilantro, and a mix of shredded sharp cheddar and pepper jack cheese.

Salsa Chicken Tacos
These Tacos are delicious for any occasion to serve a few or a crowd.
Ingredients
- 3 tablespoons vegetable oil
- 1 small onion, chopped
- 3 garlic pods, minced
- 1 pound ground chicken
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup chicken broth
- 1 cup salsa
- Juice from 1 lime
- 6 baked Taco Shells
- 2 cups cheddar and pepper jack cheese, shredded
- Shredded Lettuce and sliced cherry tomatoes,
- Garnish fresh cilantro, chopped, fresh green onions, chopped.
Instructions
- In a hot cast iron skillet, heat the oil and sauté the onion and garlic. Cook until the onion is clear then add the ground chicken.
- Cook the mixture until the chicken is cooked completely. Add the chili powder, cumin, paprika, oregano, salt and pepper. Stir in the chicken broth and salsa simmer for 5 to 7 minutes.
- Fill the bottom of the baked taco shell with the taco filling. Sprinkle shredded lettuce and sliced cherry tomatoes on top of the filling. Squeeze the lime juice over the filling before serving.
- Garnish with the cilantro, fresh green onions and cheese.
Notes
The filling can be frozen for up to 3 months.
