Our Smothered Chicken Cutlets with Mushrooms and Spinach is a very special recipe. The chicken cutlets are so tender and the flavor is amazing. The mushrooms are sautéed along with fresh spinach. Finally the cutlets are smothered with a delicate sauce and the tender vegetables. This delicious recipe can be served for a special company dinner, or a casual family dinner.

Smothered Chicken Cutlets
with Mushrooms and Spinach
Cut the chicken breast in half. Place the chicken cutlet into a sip lock bag. Pound the chicken until it is thinner.
Set aside.
Mix the Italian dressing mix, flour and seasons in a large shallow bowl.
making sure that the cutlets are well covered.
In a large hot skillet add 1/4 cup of vegetable oil, then cook the breaded chicken cutlets on each side until lightly browned and cooked through. The temperature should read 165 degrees.
Remove the cooked cutlets to a plate and set aside.
Add the butter to the grease and crumbles left in the skillet.Remove the cooked cutlets to a plate and set aside.

Remove the spinach to a holding plate. Add the heavy cream, Parmesan Cheese and seasons to the sauce stirring constantly until the mixture thickens.

Place a lid on the skillet and cook on low for 10 minutes.

Serve straight from the skillet or a lovely serving dish.Either way it is delicious!
