Whats For Dinner Next Week: Turkey Casserole

Hello, I am so excited that you could come over today! Come in and sit down with me for a while, let me get us some hot tea. It is really crisp outdoors today. There is always a certain excitement in the air the week of Thanksgiving. Folks getting ready for guest in their homes and others preparing to travel to be with family and friends. We will have some family members here this year to share our Thanksgiving day. We need to get busy with this menu, we will have a lot to do.

(made with left over ham from Sunday)
 Steamed Broccoli
Green Salad
Wheat Rolls
Cake or Tart

Southwestern Quiche
Fruit Salad
Chocolate Chip Cookies and Blue Bell

Thanksgiving Day
Turkey and Corn Bread Dressing
Fresh Green Bean Medley  Sweet Potato Casserole
Fresh Buttered Corn From last summer's garden
Fresh Turnip's and Turnip Greens from the fall garden
Mixed Fruit Compote  Fresh Cranberry Sauce
Homemade Pickle Beets and Pickle Pot Pickles
Homemade Yeast Rolls
Pumpkin, Apple and Pecan Pie
Garnished with Whipped Cream or Blue Bell

Turkey Delight Casserole

Left over Pie (maybe)

Turkey Delight Casserole

 Turkey Delight Casserole
2 1/2 cups cooked turkey or chicken
2 cups cooked rice
1 cup celery chopped
1 cup onion chopped
2 cups fresh mushrooms chopped
2 cups cut green beans
1 8oz jar chopped pimento
1 cup turkey or chicken broth
1 cup sour cream
4 ounces soften cream cheese in small pieces
1 1/2 teaspoon salt
1 teaspoon pepper
2 1/2 teaspoons thyme leaves
1 1/2 teaspoon poultry season
dash cayenne pepper
Saute the celery, onion,and mushrooms in one cup of turkey or chicken broth reducing the liquid to one half .
Add the pimento,and green beans continue to heat until warm. In a large bowl mix the turkey or chicken with the rice and all the seasonings. Add the saute vegetables and mix well. Add the sour cream and cream cheese and mix well. Pour in to baking dish.
Bake 350 degrees for 30 minutes.
This is a great casserole for left overs. It freezes well for up to a month.
