I have so much fun creating new recipes and this is one of my new brunch and breakfast recipe's that we just love. This is a great combination of sausage, eggs, and seasons all rolled into a nice dip of goodness sitting on top of a toasted muffin and covered with a layer of melted cheese. This recipe has quickly become of of our breakfast favorites.

Oven Toast English Muffins To A Golden Brown

Whisk Together The Eggs and Seasons

Add Some Shredded Cheese

Pour The Egg Mixture Onto The Browned Sausage

Stir Together Until The Eggs Are Set

Place A Large Scoop Of 
Sausage, Egg & Cheese Mixture On Top Of
The Toasted English Muffin

Melt The Cheese Slice Under The Broiler

Sausage and Eggs Breakfast Melt

Ingredients
6 Servings
1 pound breakfast sausage
3 English Muffins, split in half
6 eggs, room temperature
1/2 cup half & half
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon cayenne pepper
1 cup sharp cheddar cheese, shredded
6 slices Colby-Jack Cheese
Directions
In a hot heavy skillet brown the breakfast sausage into little crumbles.
Leave the skillet on the burner with no heat.
Split in half 3 English Muffins and place them on a baking sheet.
Cook the muffins at 425 degrees for 8 minutes or until they are golden brown on top. Remove from oven and set aside.
Whisk the eggs, half & half, salt, pepper and cayenne until they are fully whipped.
Add 1/2 cup shredded cheddar cheese.
Heat the sausage to medium heat and add the egg mixture to the sausage.
Stir the eggs and sausage together until the eggs are setting, then add the last 1/2 of the shredded cheese.
With a large scoop place 1 scoop of the mixture on top of the toasted English Muffin, then place a slice of the Colby-Jack Cheese on top of the scoop of sausage & eggs.
Place under the oven broiler just long enough to melt the slice of cheese.
Serve hot with your favorite jelly or salsa.
