Retro Frog Eye Dessert-Salad
The first time I ate this recipe I really thought it was dessert, but it was identified as a salad. When I began to make the salad for our family, I just called it dessert-salad. This recipe is a combination of tiny little pasta called Acini De Pepe Pasta, some fruit, a delicious custard, marshmallows and whipped topping, oh my goodness! Through the years I have shared this dish with so many covered dish luncheons and dinners, along with family events. You may have your own Frog Eye recipe and I hope you love your recipe as much as we love ours!

to package directions, drain and cool.
Add a citrus custard into the pasta and mix well.
Add the marshmallows,
( yes its ok to have a few for yourself for a treat!)
Now it's time to layer on the shredded coconut.
Last we add the whipped topping.

Retro Frog Eye Dessert-Salad
This is a great recipe that can be a dessert or a salad. A combination of Acini Di Pepe, fruit, custard and whipped topping!
Ingredients
- 8 ounces Acini De Pepe pasta, cooked and drained
- 1 (20 ounce) can Pineapple Tidbits (reserve the juice)
- 1 (22 ounce) can Mandarin Oranges, drained
- 1 (8 ounce) crushed pineapple, drained
- 1 cup pineapple juice
- 1/2 cup sugar
- 1 tablespoon flour
- 1/4 teaspoon salt
- 1 egg beaten
- 1/2 tablespoon lemon juice
- 1-1/2 cups miniature marshmallows
- 3/4 cup shredded coconut
- 1 (8 ounce) container whipped topping
Instructions
- Cook and drain the Acini De Pepe Pasta according to package directions. Let the pasta cool to room temperature.
- Drain the pineapple tidbits and reserve the juice. set the fruit aside.
- Drain the mandarin oranges and crushed pineapple, then set aside.
- In a saucepan over medium heat, stir together the reserved pineapple juice, sugar, flour, salt. Whisk in the egg and continue to whisk constantly until mixture thickens and is smooth. Remove from heat and whisk in the lemon juice.
- Place the cooled pasta in a large mixing bowl, stir in the custard mix until completely mixed.
- Fold in the pineapple tidbits, crushed pineapple, mandarin oranges, marshmallows and coconut. Fold until completely blended.
- Fold in whipped topping.
- Refrigerate before and after serving.
This has been refrigerated and can be put into
serving dishes or a larger serving bowl.
